Name Parmesan Crusted Chicken
Number of People 6
List of Ingredients Chicken:
2 eggs
1 c. flour
6 boneless, skinless chicken breasts, cut in half or strips (about 3 lbs.)
1 1/2 c. parmesan (fresh is really good)
salt and freshly ground pepper
1/2 c. olive oil

Tomato-Basil Sauce:
15 fresh Roma tomatoes
2 T. olive oil
3 large garlic cloves, minced
2 T. fresh basil (or 1 1/2 tsp. dried)

pasta of choice
Description Whisk eggs til foamy. Combine flour, parmesan, salt and pepper. Dip chicken in egg, then coat with flour mixture. Prepare the sauce and while it simmers cook the chicken. Heat oil til hot, not smoking. Saute chicken on each side for 3 to 4 minutes on high, til done. Set aside and keep warm.

For sauce, place tomatoes in food processor til chunky. Heat oil and saute garlic for 30 seconds, being creful not to brown. Add tomatoes and cook 5 to 7 minutes. Add basil and cook 2 more minutes. Season with salt and pepper.

Serve over pasta of choice.
